Our nephew turned 9 years old.  Where does the time go?  I remember when he… yeah, I sound like an old lady.

Anyway, I wanted to make some sort of appetizer for his birthday party, but I didn’t want to make the standard favorites of chips and salsa or veggies with dip.

In our family, we all love bacon.  I mean, who doesn’t love bacon??  And we all love potatoes.  I mean, who doesn’t love potatoes?

So I thought about potato skins, but I wanted something bite-size and nibbly (Is nibbly even a word?  No, but it fits.)

With thoughts of bacon and potatoes and nibbly, I came up with the Bacon and Potato Tidbit Appetizer.   I used potatoes, bacon, rosemary and chives fresh from the garden and some garlic to come up with a tasty party treat.   It was a hit!

The creamy potato with rosemary garlic flavor combined with the crisp of bacon and then dipped in the sour cream – chive mix was heaven.  The angels sang!!  Those tidbits flew off the plate.

Bacon and Potato Tidbit Appetizer is bacon wrapped potato chunks and tastes like a mini potato-skin with sour cream chive dip - perfect for a party | Our Rosey Life
INGREDIENTS
  • 1 lb. red potatoes
  • 1 lb. sliced bacon - not thick slab
  • 2 Tbsp olive oil
  • ½ tsp. kosher salt
  • ⅛ tsp fresh ground pepper
  • 1 clove garlic - minced
  • 2 tsp fresh rosemary - minced
  • ½ cup sour cream
  • 2 Tbsp chives - chopped
  • pinch of salt
  • ⅛ tsp fresh ground pepper
INSTRUCTIONS
  1. Preheat your oven to 400º.
  2. Line a baking sheet with parchment paper.
  3. Scrub your potatoes and cut them to 1 inch size (bite-size). Keep the potatoes roughly the same size, so they cook evenly.
  4. Place the potatoes in a pot and cover with cold water.
  5. Bring the pot to a boil and cook them for about 4 minutes or until slightly tender.
  6. Drain the water and put the slightly cooked potatoes in a bowl.
  7. Add the olive oil, salt, pepper, garlic and rosemary and stir to mix.
  8. While the potatoes are boiling, cut each strip of bacon into 3 pieces.
  9. After the potato mixture has cooled, wrap one piece of potato with bacon and secure it with a toothpick.
  10. Place the bacon-wrapped potato on the baking sheet.
  11. Continue to wrap each bite of potato with bacon.
  12. Put the baking sheet in the oven for 20-30 minutes or until the bacon is crisp.
  13. You may need to flip the bacon potato tidbits half way during the cooking process.
  14. Remove from oven and drain on a paper towel.
  15. Meanwhile, mix the sour cream, chives, pinch of salt and pepper.
  16. Taste and adjust seasonings.
  17. Serve the bacon and potato tidbits on a platter with the sour cream and chive dip on the side.
